一、白酒
1. Baijiu
1、將白酒倒入無色玻璃杯中觀察,一般狀況下應是清亮透明、無懸浮物、無沉積物的液體。

2、將污濁白酒置于室溫或15~20℃溫水中,如污濁沉積現象很快消失,這類沉積物沒毒,不影響酒的質量。

經上述方法處理,沉積物仍不消失的,可將沉積物過濾提取,依據其色澤、形態作如下判斷:①白色沉積物可能是鈣鎂鹽物質或鋁的化合物,大多數來自勾兌用水或鋁制的盛酒容器;②黃色或棕色沉積物可能是鐵、銅物質,來自盛酒容器或管路污染;③黑色沉積物可能是鉛、單寧鐵和硫化物,可能來自鉛錫冷卻器或酒中的含硫化物,以及鐵與軟木塞中的單寧發生化學反應發生的物質。

二、啤酒

啤酒出現沉積物的原因有許多,常見的原因有三種:

1、夏天天氣炎熱,為了保證啤酒不變質,啤酒大多運用冰鎮儲藏,而啤酒里的蛋白質和麥芽糖在低溫環境下,簡單釋出發生沉積。
